An update:
I uninstalled sparrow and Bitcoin core and deleted all associated files. I then reinstalled them and sparrow is now connecting to the node perfectly. I guess we'll see if this issue comes up again in a few weeks. Maybe something got corrupted in Bitcoin core? Idk but thank you everyone for the suggestions!
So I had a very brief power outage today and now sparrow won't connect to the node again. So strange. My only guess is that because bitcoin core didn't shutdown properly it's causing some issue. Am I just going to have to reinstall bitcoin core everytime my pc shuts down abruptly?
