But looking at some projects like El Salvador I just keep wondering, are there gonna be countries that will try making bitcoin their official currency and make all transactions using it?

It's possible few other country would legalize Bitcoin as currency or payment method. But at present, i don't expect they'll use Bitcoin to make most/all transaction or even make it mandatory to accept Bitcoin.

Do you think there gonna be any consequences for that?

At very least, we know IMF become less favorable towards El Salvador.

We can also say that it will create a huge load on the bitcoin network to make all these transactions so it will probably be even more expensive and slower because of that.

This can be remedied by using LN (mostly for small/micro-transaction) or even proposing block size increase.
