OK, so - I got it back! 

All I did was uninstall every version of Electrum, shut my macbook down, restarted it and then downloaded the newest version of Electrum again and - POW! I was able to access my wallet again...? 

Thanks for all your help guys - really appreciate that - I was a bit worried there for a while
