OK, apparently my problem was that my stake was too low. My minting transactions do usually get confirmed after I bought more coins on Freiexchange. @paramind22 I guess you noticed that. Thanks for the IP list.

Last month, I noticed we went from 4 to 6 nodes, but a lot of coins must have stopped staking. Suddenly, I went from minting a few times a day to about every 10 minutes.

Today, my wallet says it's not staking because it can find only 2 nodes. Did somebody forget to restart their node after maintenance? There was another Windows update on Tuesday.
