Likely becusse you connect to a server manually, which means that you selected the server you connected to. You can change the server that you connected to, or change it to automatic and let electrum connect you to different servers that are available. That should work.

If it does not work, update your Electrum, or check you seed phrase backup, delete the wallet and download the latest version from https://electrum.org
