Probably because even though it is a very secure network, there are still some risks of compromise. That could be one reason why there are only a small number of online casinos that have LN implemented as their payment method. It is indeed a drawback in my opinion (I'm not sure if it is a total risk or not), but I believe the risk should not be neglected.
The potential risk on LN can be minimize if the developer who will setup lighting network is knowledgeable. I think casino doesn’t want to add a currency that is not in demand because it requires additional cost for hiring a developer to setup LN network and at the same time they will need to hold some this tokens on there own wallet which means they might stuck their Bitcoin on LN untouched for a long time if no use it. This is the reason why exchange only add currency one by one base on demand since they can add all at one time because setting up wallet address is very easy for them.
