If you have backup of the QR code or profile data which needed to activate eSIM, you can just disable eSIM on old device and then re-use that QR code/profile data on new device. Android and iOS also have feature to transfer eSIM between certain device. But otherwise, you'll need to contact your cellular provider which could be tricky and time consuming.
