My question then is, which are the best countries that can access these sites without issues, and pass all KYC checks? I'd love to hear your opinions!

In this case, there is no best, first of all, check if the casino accepts players from your country and if the answer is yes, then you can also pass KYC in that casino. Many of us here on the forum do not like KYC, and we have been actively avoiding it for years. I guess each for our own reasons, and there are a few good reasons for sure. If you are not lazy you can check some threads about it here in the gambling section, there are pretty nice comments, you can start from these ones:

- Is KYC data on Gambling sites safe?

- Information of Crypto Casinos License and KYC requirements

And there are good & nice casinos around that still don't ask for KYC, especially if you are a fair player you won't get in a situation to be asked for that.

since most licensed casinos are requiring kyc from their users, better play and submit your kyc docs to few reputable casinos that you think you will really play with most of the time. it is best to submit kyc to only few of these casinos. and not to every casino which offer bonuses or rewards. as each gambling site have their own terms and conditions as well as gambling license, much better to read those sections before you start playing with them. so you won't get the surprise of your life when you request for withdrawal from the site. also, if you will use vpn, better inquire from the casino if it is not clearly stated in their ToS.
