Even if you want to custom the fees but if the current fees are quite high, that's not going to help. You still have to watch out the fees and wait until they drop and it's on the amount that you're okay to pay with.

As much as we want to encourage them to pay with Bitcoin, me as a business owner, I'll choose the other way when the fees are like $1-$10+.
