If you're use a centralized exchange, you're no longer anonymous. 
None of us is forced to use centralized exchanges so technically it’s our choice. Secondly, this doesn’t have anything to do with centralized exchanges because it’s the company that knows who you are, and not the other users. have you heard of any centralized exchange that posts people’s identity online? Binance for example has a lot of users and I can bet that there’s that user who transacts millions of dollars on the platform but doesn’t let anyone know it’s all around Bitcoin
