LST, LRT and cross-chain interoperability protocols like layerzero, hyperlane and maybe debridge, these are the most innovative so far. but too bad, most LRT project are grifters, just milking the community until the latest drop.

so far the only project that I think live up to the expectation is layerzero, the protocol still so active even long after the TGE, and the price of the coin is still quite great.

other than that there's not much, just some new dev reinventing the wheel, trying to compete with existing platform. though eventually I think there will be new defi innovations coming up, just matter of time.
