You will hardly see a successful trader anywhere and many of the few who manage to be successful are not consistent in the long run. Should we now consider it as employment? No. Not even by virtue of employment meaning, this is what you run for yourself, so no one is employing you, but you're trying a passive income through it.

It would rather be called self-employed, and even then - it's not stable, just like you said.
So, I wouldn't call it employment too.. Though people can call it by different names, the reality would remain the same.
