I think that AI alone will not really take over any jobs. We currently only use it as you said, AI assistance. It has basically become a useful tool that helps us and makes the job easier. But the job still remains as is.
In the future when we have even newer technologies then perhaps a mix of those technologies will take over old jobs. But right now only humans are versatile enough to get any and all facets of a job done. That is not something AI can do.
From the sophistication created by AI, it will not happen in the near future that AI will replace human jobs, but it will take quite a long time, but AI cannot replace all human jobs, maybe only a few parts are needed because the process is very long to create and replace human jobs.
Don't let us deceive ourselves, AI is already displacing humans in their jobs, this may not be pronounced yet because there are many things humans must still be involved in but the labour forces that should have been employed are now being replaced by AIs and this year alone, many companies reduce their human workforce due to their intention to replace them by AIs that can do it much faster and better. It is not a matter of whether it will affect, it is happening and the government should do something before it is devastating even as it is said that AI will create jobs too.
