They are so unrealistic because most streamers vicariously make money and the wider audience their videos attract the more profit they get. Sure, the size of the  given video crowd depends on the stage direction, so some of them I know one guy that do this more than often even invite gambling directors whose duties include the  cutting off so called non-clickable  scenes.

It is good that people are different and watch such content under different angles. I am not an impressionable person. Whenever I see how in few seconds someone double his money in blackjack, I dont rush to make a deposit and try it myself. For someone such content is only entertainment. And I think people have already gone from being simple and trusting everything they see. Even if such videos and streams are really unrealistic, not every person who saw them will trust in them. Great that we have so much content uploaded daily, that I believe not many impressionable and addictive persons will find those gambling videos among fails, kitten, jokes, vlogs, guides, reviews, educational, gaming and etc.
