Would love to hear your thoughts on how we can best communicate this to players who are skeptical of blockchain in gaming.

You will need two different approaches.  First, you'll need general public awareness.  Try one of the new AI tools and make a video explaining what you just told me.  At the end of the fun, educational video, you can promote your game.   If you are an industry first, that alone will drive traffic to your game.

The second approach is proving you are not just all talk.  When new buzzwords come out, every wanna-be developer and their pet of choice add it to their project descriptions.  You need to prove your data is contained on the blockchain, and the best way to do that is to document so others can examine.   Without revealing your full database structure, your game description should show what data is stored, where it is stored, and how the member can participate in that blockchain.    You don't need to store everything in the blockchain, such as personal information, but anything related to game rewards should be distributed so it can't be abused.
