I prefer security deposit. I do not want to only trade with reputable traders because I think that they are collecting too much information about other individuals since they are reputable and everyone wants to trade with them and secondly, I feel like receiving transaction from someone who also fills hundreds of transactions every day, exposes me a little bit in a sense that I received a transaction from a guy who also regularly sends money to thousands of other guys. It's already clear that I traded on a BISQ. I might be wrong, so correct me.

That's a valid point and I generally agree with this.
But let's not mix Bisq 2 and Bisq Easy. The latter is only a subset of the former: Bisq 2 will have several trading protocols, among which there will be Bisq Easy and Bisq MuSig. Bisq MuSig is not available yet, but it will work like Bisq 1, with a security deposit.
Bisq Easy is the only option right now because it was probably the easiest to implement (I'm not part of the Bisq team, so that's just an assumption) but it was never meant to replace the multisig / security deposit approach.
The problem Bisq Easy is trying to solve is: how to give users who don't already have bitcoins a way to buy their first non-KYC coins. You (and I, and many others) are just not the target population of this new feature.
