In my gambling experience, I have never cashed out of gambling before the game ended. Although I have wanted to cash out once or twice, I have stopped there. I did not cash out because since gambling is a means of entertainment, why would I cash out before receiving entertainment? Even though I am offered a cash out offer that I can cash out now and receive more than my fixed bet amount. Many people may accept such offers voluntarily, but I do not and whether I will do so in the future will be announced later, but not for now.
You have your own way of perceiving gambling; it seems you are more into it for the entertainment and don't care about the result and the outcome. Some people might say cashing out before the end of a game can make them feel less of themselves since it's a decision that clearly shows that the person doesn't trust their own prediction.

That's for them; as for me, I take any chances that I'm offered. If I'm in an opportunity where I see a significant amount to cash out and I'm unsure of the outcome of my remaining games, I will do that without hesitation.
