If you believe you're skilled at sports betting, enough to pick the single best game daily.. could you actually discipline yourself to bet just once per day for an entire season to prove your profitability?

Personally, I'd struggle. The urge for more action would get to me. Even starting with one game, a loss would leave me feeling unsatisfied, tempted to chase and recover immediately rather than wait for the next day.
I have applied this and it only lasted a few weeks, lol. The urge to bet on parlays has always been a strong reason for me personally and I admit that disciplining myself will be difficult, my current strategy is quite simple, allocate the same amount of money every month and I only bet on football games, one bet for the best game according to me with a fairly large bet amount, one other bet is a random choice combining 5+ games with a small bet, the thrill is in the random choice because if you succeed, the profit will be enough to cover a little of the loss in the previous week.

That's actually a discipline you've set for yourself and as long as you follow this rules I don't think you'll ever need to worry about addiction. One of the problems with gamblers is that, they never set some rules and tries to follow them at all cost, I understand it's  absolutely  tempting to gamble more when you're  on win or in a losing streak but there is a better need to learn how to control our emotions. Gamblers who have lots of years experience without any record of irresponsible gambling habits or addiction are those who make rule and abide by those rules, aside gambling in life those who makes life comfortable for themselves are those who disciplined their selves and tries to do the impossible.
