I don't think the service is 11 years old, or at least as we know it as a privacy-focused service.
Take a look at
eXch's announcement thread on Bitcointalk. It was created in 2014, but I can't comment on how the experience using the exchange was in those days. Personally, I doubt it was privacy-invasive in any way.
Back to the question in the OP. I am not a fan of
Bisq and the way it works. I respect what they are trying to create, but my intention when doing a swap isn't to sit in front of a computer screen for hours waiting when and if someone on the other side will accept my trade. Some people have said that Bisq's fork
Haveno is better for several reasons but I have never tested it.

Peach Bitcoin. I like it but I don't like the 1000 CHF daily trade limit and that you have to enter your fiat/bank data into the app. They claim they can't access this information but I have no way to verify this and have to trust them. I might also consider trying
Vexl and
TradeOgre.
