Hackers mostly seem to be one step ahead, that is why they are very successful when they hack. I doubt hackers would steal funds unless they already decided how to move the funds around. A scary thought about AI is what would happen if hackers start using it help them break in to systems deemed secure.

Thankfully we do not hear news about hacks taking place every week but when they are announced, it is clear hackers are getting away phenomenal amounts of money.
