What could be the best possible way to have a trading mentor? could it be to select a mentor and then let them know that you have chosen them as your mentor or follow them anonymously without their knowledge that their mentoring someone, and you are following in their steps?

If you aim to have a serious mentorship, then you should let your mentor be aware that you are choosing him as a mentor. Your private discussion will pave way for more efficient learning that you should gained from him, since you will see him as someone like your model, and whatever his words are like your guide that will lead to a bigger understanding and better trading experience once the mentorship is done.
That works better for others, and I guess that will also work for you, but you have to pay the price whatever you both agreed.
I don't think having a mentor without the idea of who the mentor is constitutes good mentorship. In mentorship, it is expected that both parties have some communication, allowing you to learn from the mentor's past experiences while also sharing your challenges as a trader.
