rather than setting up a multisig, would it be good to split my seed words into two remote locations? or is this idea flawed in some way?
Splitting your seed phrases into two locations is necessary because if a natural disaster like earthquakes, floods etc or an accident like fire happens in one of the locations where you stored your seed phrases, you can be able to recover it in the other location but multisig account is just for you and a third party to own custody of your wallet and not because of security reasons. However, the idea is not flawed if you don't keep them in a location where it can be seen by others.
Hey!
You didn't quite understand the Op. He doesn't mean to save your seed phrase in two different locations, he means to divide the 12 words phrases into two, keeping 6 words in a different location and the other 6 in another location. It is not like keeping the comprehensive 12 words seed phrase in two different locations.

...Storing seeds alternatively only helps to recover your seeds in case you lose access to one, you have a backup to use and fall back on, which is different from two cosigner signing a transaction.
Multi signatory wallet could also function for security purpose. I could be the only signer, signing from two or three different devices.
