Well, the company may decide to add stablecoins as a means for payment, but I believe that real adoption will happen when the drivers behind the wheels start deciding to accept stablecoins for rides made.

I don't know about other countries, but in mine, Uber drivers are always in a hurry to receive payment for the rides through the quickest means possible. If they get to know that payment with stablecoins is the fastest, that can drive adoption.
