Some reasons are:

- Why should they stop when luck is currently taking effect? They will deplete their luck to the max until not realizing that their big winnings are already depleting too. In the end, no cashout happened.
So how about people who aren't able to monitor their games to know when to and when not to cash-out? Will you say those people aren't lucky enough? Because to me, I actually think if the word "luck" is to be involved, then it must have been when the game played just as predicted. Because everybody must not be on their sports betting apps to know when to cash-out or not.

But since they have lots of plans, satisfaction doesn't have a limit, and they want to win more. Therefore, just continue to play. In the end, no cashout happened.
Naturally, it is true that humans has an insatiable needs, and when they win, they will always wants to win bigger, and our ability to act responsibly, despite the needs/wants we may seek as gamblers is very very important. Hence,  I absolutely agree with you that's it's literally not a bad idea if you as a gambler cash out a certain percentage after winning your bet.
