In sports, there is always someone winning dominantly. It can get to a point where they are almost always expected to win. By that point do you continue to bet on those favorites to keep winning or does it bore you? Would you enjoy stirring it up a bit just for the fun of it and betting on the underdogs even if the chances are quite low?

If betting on the favorite could consistently generate profits, even if it wasn't much, bettors would always bet on it.
Unfortunately, the fact that bettors can still lose when betting on the favorite makes them open to the option of choosing the underdog under certain conditions.
In sports betting, bettors won't just bet on 1X2 but also other options to increase their chances of winning, which is the result of studying every possible outcomes.
Not guaranteeing anything on the favorite team, how many people have lost their favorite team? If this were consistently true many bettors would follow suit, but unfortunately it is NOT.

That's the nice thing about sports betting is that when faced with a tough match there are other betting options not necessarily betting on 1X2 but many of the goals, corners and more.
Many people study betting like this so that the odds they choose are not necessarily which team wins.
