In fact, a Chelsea victory over PSG isn't impossible, but the probability is extremely low. There are certainly reasons why people think this, one of which is PSG's impressive performance throughout the competition. PSG defeated several favorites, including Bayern Munich and Real Madrid, to reach the final, while Chelsea faced relatively weak opponents. For this reason, PSG was considered the favorite and Chelsea the underdog, but the reality in the final was very different.
Agree. It actually wasn't zero chance for Chelsea to win against PSG. We only considered the chance of Chelsea winning the match rather small due to the amazing performance of PSG during this season. We know that PSG won all the domestic competitions, they also won UCL trophy. In addition, PSG also performed quite consistent during the FIFA club word cup. So, it was very clear about our reason to favor PSG. However, it is a football match, there is no guarantee that a stronger team will always win the match. Chelsea proved it, they could defeat PSG although PSG was on fire.

Nothing is impossible in this world, but we must also think realistically and not trap ourselves in low probabilities like 1% to 5%. This means playing it safe, choosing whatever is most likely, including when making gambling decisions. Avoid betting on low probabilities, as the chances of winning are very low. Even if we lose when choosing a team or something with a high probability, it's rare or only happens occasionally.
Indeed. Even if nothing is impossible, we must consider the probabilities. In betting, the winning probably will be lower if we choose non favorite team. However, it doesn't mean impossible for a surprise. There will be always a chance for a surprise in sports betting. That's why we need analysis before we place our bets.
