Are we creating a healthy future of work or new methods of burnout? Are these so-called flexible jobs fair to all or are we creating a new form of workplace inequality? How can we make work better not just to the company but to real people?

I don't think that this is new though, I have been a work before wherein I have flexible hours and do work at home. The caveat is that you are what we call on-call, anytime that there is a problem, if it's your schedule to handle everything then you will be called. But if in the case that there are no breakdown or issues, then you can go and sleep at the comfort of your home. And then there are companies that requires their people to be present in the office in the other side. Perhaps the difference could be the pay but both could still be healthy if you know how to balance life and work. So you really need to schedule everything with your manager too, like your vacation leaves so that you will have time with your families.
