From his perspective, that would probably be the biggest money fight he could hope for. After he got brutally KO'ed by Daniel Dubois in his last fight, many fans have written him off.
I have my doubts whether Paul would actually sign a contract and fight AJ. Talk is cheap. And if he does, I would have serious doubts if the fight will be honest or rigged. Let's be honest, even if Joshua is past his prime and even if we give Paul credit for all his previous fights and acknowledge he's not just a YouTuber anymore - we all know that if both fight at 100%, Paul would get KO'd.
