Maybe there would be offchain/sidechain solutions, that would solve that problem, but they would most likely be centralized and charge transaction fees on top of the blockchain transaction fees.
Lightning network exist to solve that.
Yeah people have to pay when they want to create a new channel, but after that the fees they need to pay for making transactions is very low. So, in the long run, it won't hurt you for paying the fees.

Then what about a new coin better than bitcoin that can handle so many transactions ?
What's the point if you use centralized coins? it's become pointless because there's nothing different between centralized coins and fiat.
They are basically CBDCs in a cool wrap, and are not affiliated with the gov directly, so, yeah, everybody does what they like, but Lighting network is truly a great solution.
