For example, let’s say one team starts off slow and falls behind early, but then they suddenly make a strong comeback. The game becomes close, and at that point the betting line gives you pretty good value if you pick them to win.

Would you place your bet on that team just because they have the momentum on their side, or do you think it’s just an illusion and not really a factor in the outcome?

Watching games and making up your own thoughts based on momentum has value. It is still luck of course and it doesn't eliminate that factor, but when you know quite a bit about how sports and specific games can develop based on momentum, it will absolutely help you make better informed decisions about your bets. But ultimately it costs you time of your life if you spend hours watching those games. I think it is most fun when you have your favourite games going on or the biggest events like the finals in any sport you like. Big games in football or basketball when you watch the games anyway.
