For example, let’s say one team starts off slow and falls behind early, but then they suddenly make a strong comeback. The game becomes close, and at that point the betting line gives you pretty good value if you pick them to win.

Would you place your bet on that team just because they have the momentum on their side, or do you think it’s just an illusion and not really a factor in the outcome?

If you care most about having some fun and leaving the outcome to mother earth to figure out then you can apply or readjust your game since it is still ongoing, I don't see anything wrong with that, the problem that could occur later is if you put too much mind on making money from the game and after chasing the most active team they will fumble in the end then you will feel pained.

There are so many things you can get attached too but gambling shouldn't be one of them, not getting too attached to gambling will allow you to be disciplined and responsible with gambling. Many gamblers like changing their games before a match ended but they still lose money and they get frustrated, they choose right before the match started and because they feel less comfortable due to the way the match is going they decide to switch.
