Because of economic downturn in the world, most people have become jack of all trades and master of non. learning skills and not getting a mastery of them because they are testing waters on which of them will eventually pay the bills.
The skills that pay off most often are those that are difficult and time-consuming to master. That is, highly specialized specialists earn high incomes. "Spreading" your time on mastering many skills, you can't master these skills "deeply" enough to become a highly qualified specialist and receive, accordingly, high pay.

The "key" here is to become a unique specialist in the labor market.

I have a friend who during her spare time learnt soap making, baking, sewing yet she's not making  money off these skills.
What prevents your friend from making money on these skills? Nothing. She doesn't make money because she doesn't use these skills. She spent time and effort on mastering these skills, but now she doesn't use them. It's irrational. At worst, she can use these skills for personal purposes, such as baking and sewing, which will reduce personal expenses in these areas (food and clothing).

Entrepreneurship has never been safe and is associated with risks. When choosing a direction, you need to proceed from the current demand in the market. But there are niches that will always be relevant: food (you always want to eat), the beauty industry (hair always grows), housing rental (you always want to sleep) - here are some of them.
