Most likely, it's just a very advanced search on the Internet or on pre-saved materials from the Internet in a database with advanced query processing functions and advanced data presentation functions.

If you consider arbitrage on odds and implement AI to auto take profit, it could be a way to make money but with more people into it, there would be less chance of arbitrage and less profit from it.
The people that make profit in gambling are the operators and investors. AI would be more relevant in other investment. Even when everyone uses AI to trade, the trading would be less and less profitable and it would be a dumb place to invest.
