Would Bitcoin survive through offline solutions like mesh networks and satellites, or would it completely halt?
If there’s no internet, there’ll be no possible transactions made, but bitcoin will never stop from its existence. It will still be there, whether in our wallets or in centralized exchanges, but its function as a currency or investment will be temporarily shut down and will only be back once the internet is available again.

However, it will reduce its development towards global adoption if this losing of internet will be happening most of the time, and it will lessen the exposure of bitcoin towards its new investors and users in the crypto market.
