Yes, we have to worry a lot about our KYC because cyber attacks are very common these days. And they especially try to hack financial online accounts such as crypto exchangers and gambling sites. So doing KYC verification on these is also very risky. That is why you can always gamble on big and popular sites and sites whose security systems are very strong, because even if they do not pay attention to the user's documents, they will at least keep their sites very secure for the safety of the funds they have. That is why I always try to gamble on big sites. Because the security of new sites can be very weak because they are in the startup stage.

What is the connection between passing KYC and crypto exchange being hacked? You think that hackers hunt for uploaded documents more than for crypto? Cheesy Imho, its more likely that a fresh casino that has no KYC would scam user, than that casino would be hacked. I also suspect that gamblers themselves will try to find breaches in security and gameplay to milk casino, than a real hacker would bother hacking it.
Now neally all cryptocurecny exchanges have KYC procedures. It meand that the personal data not safe like a money.
The same risks will have casino if KYC procedures will become obligatory.
Players will risk not only their money but also personal data.
There are DEX out there that don't need KYC before you use them because they are decentralized exchange so it's not nearly all the exchanges that are Centralized. I believe that all reputable casinos asks their customers for KYC and your data might be safe with them because they know that it is confidential.

I feel safe using a reputable casino with KYC and a casino that just pop up from nowhere amd claim to be a No KYC casino.
