Your wallet still stake while you turned it off. But your transactions did not show up because it isn't synced to the network. Syncing and staking are 2 different things. You still receive your stake while you  turned your wallet off, these stakes recognized by the network, but your wallet didn't see it. When you open your wallet and sync to the network, your wallet is just catching up and show you the staked transactions.
