Just one thing, I sent 1000 KTK to the donations address and I never got any confirmations, still 0
Do I just go about updating the wallet normally?

Yes, just extract the wallet and open. Doesn't need any of the appdata files deleting.
Grab the tx id, and check in the explorer.
still says 0 confirmations. I couldn't find anything on the explorer.Status: 0/unconfirmed

Should I delete everything (except wallet) and try again?
It's not on the blockchain.
You can make a backup copy of wallet.dat, but no files need deleted for this wallet update. But for the unconfirmed tx you can try deleting all the other APPDATA files and download the blockchain again and see if it returns.
