If you don't hide your IP address, you can be unmasked by tracking the IP as opposed to tracking your wallet address.  Even with Darksend.

If your grandma were sending an unsigned love letter to her boyfriend, using her actual return address isn't the best idea.  Your grandpa might put 2 and 2 together.
