I can see how the mining pools make sense for the investors and early adopters to artificially prop up the price and demand of the coin. But don't they negate the supposed environmentally friendly claims of the coin that come with using PoS instead of PoW?

Well, what's the real value of holding black coins.
It's not like you can walk into the supermarket and buy a case of beer with them.
Basically any coin that needs PoW mining to keep going is not going to work long term and become a viable alternative to fiat money in the real world.
Doge is at least kind of funny though.

It doesn't solve distributed consensus.
The equilibrium between energy use in mining and market cap means it cannot scale. The only way the market cap can grow significantly is by having centralized miners that have access to private energy efficient mining technology, which makes the "distributed" part meaningless.
All in all, it's a total scam.
