It's pretty common in the industry to transfer your funds immediately from deposited address, as they are keeping them on some hot wallets, or custody wallets - probably custody as a registered entitiy with the license, at least for their safety.
Regarding ChangeNOW, that's also pretty normal to use, as they are in top 10 for those kind of services (and no, maybe they were not changed from other currency to USDT - maybe there is something else, but at least you got them)?
