For the past few days the mining difficulty has increased. I'm mining Zcash and the value went from 9$+/day per GTX 1080 TI to 6.5$/day.
Is this normal or will the difficulty continue to increase?

i am sure that the difficulty will be increase more like bitcoin mining. this is what you need to thinking before you start your own mining hardware and you should know this. i think soon the difficulty of the coins will be increase again and if finally you think that mining is not profitable again for you, then you need to stop the mining and don't mining again.
I think even if the difficulty of ETH rise 4 times, it is still profitable for most miners.

You can mine ZEC instead.
Almost 0.04 btc now, the price now is quite overvalued, all the altcoins pump alongside with Dash,XMR and ETH, also ZEC pumps too.
If the price rises further, it is not overvalued now.
The market cap is quite large now, may be in top 10 coins very soon, Zcash will donate 20% of mined coins to the team, don't forget the sudden dumps.
It will be top 10 in a few month even if the price does not rise. The new zcash are increasing a lot

ETC is going to be approaching zero much faster than $100, so I agree with "never". I find it highly unlikely that this shitcoin will even exist in 5 years, much less have that value. Sure, stranger things have happened...but come on.

The simple answer would be no .ETC would never reach $10 in the first place let alone reach $100. Its just a waste of money if you are planning to hold to reach a imaginary price . question is when?

For ETC I do not see that option. With ETC we are currently under one dollar, and from all I know, one ETC is about ten percent of one ETH.
So chances to see an ETC go to ten dollars are at zero, in my opinion.
I would not be sure about that. ETC is already above 1$, while ETH continues its slow painful crash. ETH fanboys never understood real importance of PoW and alienated miners with their PoS bullshit. They also didn't understand the need for a sane monetary policy, which ETC is now going to implement. So, now the two coins are moving towards parity, and then who knows... Trend is your friend.
The ETC is more profitable to mine now. So it is better to mine and sell it instead of mining the ETH.

Nobody is mining zcash with the opensource miner anymore, because it is too slow.
The nethash is divided between
1. Claymore (#2 AMD windows)
2. Optiminer (#2 AMD linux)
3. Nicehash (#2 Nvidia Windows/linux)
4. Private kernels (#1 windows /linux)
Zcash is beeing harvested
Optiminer is slow and buggy. for 20 more S/s is not worthy at all. The nethash is divided between

So we need the Claymore miner to increase the speed again so that it will be the number 1. 390 will be 300H/s.

It works only with nvidia GPUs. No AMD/OpenCL support yet
We need some AMD/OpCL miners.
The price of other bitcoins? we only have one BTC with +$620 price and I only accept that one.
