Depending on the coin. I would analyze the graph over the past weeks and if its an instant increase  i.e not gradual? I would sell

That's a no. bitcoin cash is an altcoin. I will advise to hold for short-term benefits other than that, stick to BTC

Bitcoins are  best stored in paper wallet or you can split them within exchanges you have access to their private keys
