For the beginning I would recommend NiceHash to see how it's going. Afterwards you can try mining coins directly with pools. NiceHash has the advantage of getting paid in BTC and not to manage wallets for each coin you would mine.

First of all, do not use SATA. Use either molex or PCI-E. I suppose there is one card now, when you will have more, I think you should go for a modular PSU.

From power point of view the best are molex because they allow 150W power draw, next are 6 pins which allow 75W. Normally a GPU cannot draw more than 75W through the riser.
Currently I am using risers with 6 pins connected via 6 pin cables directly to the PSU, but I am looking to get molex ones. Also I avoid using adapters from let's say 6 pin to molex, or whatever.

Between 2 pools you can have first of all a difference between the pool fees, but not that high. Maybe just a few %. To have that huge difference I think the only explanation would be a huge difference between the total hashrate of the 2 pools. So the lower one will anyway generate less blocks so less reward for miners.

A good motherboard for mining should have enough PCIe slots to accommodate as many GPUs you would like to install.

What PSUs did you use in the end? I am thinking on using 2 Corsair AX1500i or 2 of the new Corsair AX1600i.
