I can't speak for Mr. "Dev" but I'm pretty sure he was thinking: "I love corgis and I love crypto coins, so why not make a good, solid coin that combines the two?"

When it comes to pools, what "stats" should I focus on? Does it not matter or can I get more "shares" from a smaller pool?

Right now it doesn't really matter at all, but in general:
Bigger pools (with tons of workers) will find blocks faster but you'll have to share those blocks with [thousands of] other workers. Tiny pools with less workers won't find blocks nearly as fast, but if/when they find one, you get more of a reward because you don't have to share it with as many people.
So personally I think it's best to find a sweet spot in between... one with a high hash rate but low-ish number of miners. But again there are only like 3-4 pools right now so pick whichever you want!

Firewall with RPC?
You shouldn't need RPC settings in .conf if you're not running in server/daemon mode.
ie. make your corgicoin.conf just:
addnode=162.243.41.34
addnode=192.241.169.209
addnode=162.243.222.29
- Turn off firewall
- My corgicoin.conf :
listen=0
rpcuser=corgicoin
rpcpassword=barkbark
rpcport=62555
addnode=162.243.41.34
addnode=192.241.169.209

daemon=1
