Yes that is a fact that the transaction of bitcoin is very fast and can be done on a single click, but the problem is that of transaction confirmation, as the transaction confirmation may take a lot of times and really make trouble when you are in market and waiting just for the transaction confirmations.

But if the shops will estimate for the favorable fees of transaction and they will have believe that in that much fees the transaction will not be cancelled or not be returned they they will easily rely on only the click on the transaction and will not bother their clients to wait for longer in the market.

If you are spending bitcoins in a shop i don't think the shops owner is going to calculate the fee they want you to pay, they wouldn't have the time and if the customer says no they will send with a lower fee then the whole thing would be a waste of time.

Bitcoin is an online currency, if you want to spend btc in shops then in most cases the closest you will come is paying with a bitcoin debit card.
