They don't produce beef from cows in North India. In North India, beef is derived from buffalo meat. Buffalo holds no significance in the Hindu religion, and therefore there is no ban on the slaughter of that species.

Of course these are two different creatures and there will be no problems if you eat a buffalo. But I think that in extreme cases you need to know about such things if you are going to India.

If you are visiting India for a short duration, then it will be better to avoid beef altogether (both cow and buffalo meat). If you are that determined to have beef, then make some Muslim or Christian friends, and ask them to refer restaurants where buffalo meat is available.
