Basically all the exchanges I think have the same withdrawal fee, you only need to find a coin that has the cheapest fee. Usually XLM, XRP, ETC or DOGE can also. The coin coin has the cheapest fee compared to ETH, BTC and so on. And if you want to trade, you don't need to overly issue the fee. It's all are same, you have to choose the best one.

I do not know the exchange site that you are using, but have you tried using Binance exchange before, because Binance low fee also extend to its withdrawal fee too, so many fees on Binance is far cheaper than those other fees that you see outside, I have used other exchanges, and I can categorically say that they dont all have the same withdrawal fee, and Binance still happens to be the lowest of them all.

For coins, I think you are on point, those coins have the cheapest fee for transaction, although I would still use bitcoin any day anytime, because I prefer to use a reliable coin than coins that I cannot guarantee what will happen to them before I wake up the next day to use what I have transferred on their platform to make payment, I know Bitcoin is a little bit high in fee, but its worth it for its services and for its reward.

Usually i will agree with your point about fees in bitcoin. Because if we want to withdraw big amount of Bitcoin and trade it with other coins, it will need more fee in trading fee, and different price will be very affect on it especially if the coin really down after we use it as coin that withdrawed.
