It depends on the specs... If they have good CPU, you can mine RandomX coins like Monero.
If those have a decent GPU with 5GB+ VRAM, you can mine ETH alongside with it.

But first, read the VPS' terms and conditions since most of them prohibits crypocurrency mining.
