I agree that most "DeFi" services are only working inside the ecosystem of a single coin/blockchain, i.e. Ethereum - and thus only serve to "exchange one type of transaction for another one". If you're interested in cross-chain DeFi based on atomic swaps, you may be interested in aliashraf's option protocol - it's however still unreviewed.
