You are going to do a large business and you are trying to hold only 100$ on escrow!!! You should do this type of business with atleast 20k$ where you should escrow atleast 5000$ because no one will trust you for 1000$ trade while you have only 100$ on escrow. So, please consider it if you really want to do the business. Also, you may open a website to run the business smoothly.

He did not say at any point that he is going to start a large business initially. If he is escrowing 100$ only, then all his trades will be under 100$ else there is no point to open a trade of 500$ with 100$ in escrow.
Also to the OP may be know which centralized platform you will be using for this currency conversion ?
